Ingredients / Instructions

Day One

  • Fresh Ginger
  • Sugar (golden, or white or whatever)
  • Water

Take one and a half cups of fresh water, place in a large container (A kilner jar is perfect). Next grate 2 tablespoons of fresh ginger, peel and all, place in the jar, add two tablespoons of sugar stir until the sugar dissolves. Place a fine cloth over the top and secure with a silicon band to stop flies and bugs getting in. Keep in a warm place.

Day Two, Three, Four, Five, Six and Seven:

Grate another tablespoon of Ginger and add to the jar, add another tablespoon of Sugar, stir until it dissolves and recover. Do this each day until day Seven.

  1. Look for Bubbles:
    Within a few days, you should see bubbles forming, and catch a fresh, slightly sweet and pleasantly funky aroma. That’s your ginger bug coming to life! If it’s sluggish, keep feeding and stirring daily.
  2. Ready to Use:
    Once bubbly, it’s ready to use. Strain off the liquid to kickstart fermentation in homemade sodas like ginger beer. Save some bug behind—and keep feeding it to maintain your wild yeast reserve.

So when you want to use the bug, take 1/2 a cup of strained liquid off, and use that in your drink base to start fermentation. Retain the ginger and other cup of liquid, top up with another half cup of water, and continue feeding. Giving you an ongoing ginger bug for later.
