Alright, this may be a surprising thing, but these treats were created by Chinese chefs in Liverpool in the 1960s it has become a firm favourite of the Scots too. Here is my take on the original. All measurements are in Metric!
Salt and Pepper Seasoning
- 15ml (1 tbsp) Salt*
- 7.5ml (1.2 tbsp) Golden Sugar
- 2.5ml (1/2 tsp) Chinese five-spice powder
- 10ml (2tsp) Crushed Chilli Flakes
- 2.5ml (1/2 tsp) Garlic Powder
- 1.25ml (1/4 tsp) Ground Ginger
- 1.25ml (1/4 tsp) Ground White Pepper
Mix all ingredients!
* Or more if you are Scottish!
Salt and Pepper Chips.

- 500g (1lb) Frozen Potato Chips
- 15ml (1 tbsp) Vegetable Oil (or similar)
- 1/2 large White Onion
- 1 Green Pepper
- 2 Red Chillies**
- 30ml (1 tbsp) Rice Wine Vinegar
- 5ml (1tsp) Salt and Pepper seasoning
- 2 Spring Onions
Cook the chips (25 mins at 220 degrees C)
Dice Onion and Pepper, and finely slice the Chillies. Heat a wok or heavy frying pan and add oil, fry onion, chilli peppers and pepper for 3 minutes, add rice wine vinegar and let sizzle for 2 mins, continually stirring. Add the chips to the pan and stir fry, add salt and pepper seasoning.
Slice Spring Onions and dress
Serve Immediately
** Either Mild or whatever your taste is.
